Happy Friday, friends! Can you believe that tomorrow is the first official day of fall? As a girl who loves autumn, I am very excited about everything this season has in store! To the weather gods out there, I would appreciate a sunny, 60-degree afternoon sometime soon. Please, and thank you.
Despite the continued warm temperatures around here, I am in full-on fall feasting mode. I already have chowder on the dinner menu for next week and have definitely made the season’s first pumpkin bread. I love the hearty food that fall and winter allow, thanks in part to the seasonal produce and baggy sweaters. Ha!

This recipe is courtesy of Lindsay, the blogger behind Pinch of Yum. I love her website and all of the recipes I have tried have been amazing! I wonder if you could substitute the Trader Joe’s cauliflower gnocchi that I mentioned here… That might make this a bit of a lighter dish if that’s what you’re looking for.
I like to take advantage of seasonal foods when cooking, if possible, and butternut squash always pops up during fall! Plus, with pasta and sausage, it seems like a winning dish to me! There seem to be a lot of other recipes over on Homemade Interest as well.
Now, Jarrett and I are not really pork chop people. We maybe eat pork tenderloin once every couple months, but I don’t know if I have ever cooked pork chops. But, pork chops with apples is something that I had growing up and seems to be a great way to use apples you’ve freshly picked! Amanda, from The Chunky Chef, made clean up a breeze too, using only one pan. Something Jarrett will appreciate, since he does the dishes in this household.
