March Meal Prepping: Weekly Menu and Grocery Haul
Good morning, happy Tuesday and first day of spring! I meant to have this post up Monday, but the weekend got away from me. They seem to be doing that more and more as the wedding gets closer and closer!
Anyways, today I’m sharing a little grocery haul and our meal plan for this week! I am working an extra 5 hours this week to avoid using a ton of time off when we head up to NH next week. Knowing that I wouldn’t have as much time as usual on my week nights, I decided to spend a few hours meal prepping on Sunday. Since moving to Virginia, I really have not meal prepped the way I used to, when I worked more evening shifts. But, it felt good to get back into it! And knowing I only have to make one more dinner this week is AMAZING!
Let’s jump right into our menu this week 🙂
What We Are Eating
Sunday: Baked Panko-Crusted Chicken, Wild Rice, and Veggie
I cut chicken breasts in half lengthwise, and coated them in egg wash. Panko bread crumbs were mixed with paprika and italian seasoning, before the chicken was rolled to coat. Bake the chicken at 375 deg F for 15-20 minutes depending on thickness, with the last few minutes on broil to crisp up the coating!
Monday: Rachel Ray’s Shepherd’s Pie
Tuesday: Leftover Chicken with Roasted Veggies/Sweet Potatoes
Wednesday: Chicken Meatballs with Spiralized Zucchini or Protein/Banza Pasta
When its a busy week, I love grabbing pre-made chicken meatballs and/or sausage at the grocery store! I throw a few zucchinis in my spiralizer and top with pasta sauce for a simple, healthy dinner.
Thursday: Going out to dinner with friends
Lunches: leftovers, sautéed shrimp or tuna over salads
Snacks: hard boiled eggs, chocolate sea salt almonds (roasted almonds coated in coconut oil, dark cocoa powder, sea salt, and a bit of table sugar), cut veggies, greek yogurt, fruit, energy balls (left from last week- find the recipe here!), banana bread muffins (recipe for quick bread here!)
How I Choose Our Menu
For the most part, Jarrett does not care what we eat for dinners. He doesn’t want to eat the same thing every day, but he could for sure eat the same things weekly. I, on the other hand, enjoy more variety!
I get a lot of our food inspiration from Pinterest. Be sure to follow me here! I have boards dedicated to healthy recipes, a board divided by type of meal (think chicken, salad, side, etc.), and a categorized board for desserts.
We mostly grocery shop at Kroger, except for the occasional trip to BJ’s Wholesale or Trader Joes. Kroger has a rewards card with online coupons, so I definitely check that and the circular to see if I can score a great deal on something! For the most part though, I do not chose our food based off of what is on sale that week. I know, I know. I could be saving more money. But I just prefer to cook what I am craving and if something we want is on sale, its just a bonus!
I try to choose food that I can easily substitute “healthier” choices for myself if I choose. This week, I can substitute cauliflower rice for the wild rice, or spiralized zucchini for the pasta.
How I Meal Prep
The first couple times you try meal prepping, it will be overwhelming, and probably time consuming. But, the more you do it, the easier it will become! In general, if things bake or simmer for a while, start those first! Then, while that meal is cooking, you can prep a bunch of other things.
I started my meal prepping with roasting veggies and sweet potatoes, followed by baking muffins and ending with the shepherds pie. While those were all cooking, I coated the almonds, hard boiled eggs, and chopped veggies. I also use that time to prep what is going into the oven next!
