Dark Chocolate Banana Energy Bites

This past weekend, I whipped up simple and delicious energy bites and thought I would share the recipe with all of you! I’m in full-on wedding prep mode now that we are only about 5 months out, so I decided to make an energy bite recipe that is more carbs and less fat, just because that is currently fitting into my fitness/eating routine a little easier. If you like chocolate and bananas (and I mean, who doesn’t?), then this recipe is for you!
Dark Chocolate Banana Energy Bites
Ingredients
1 cup old fashioned oats
1 medium very ripe banana
3 oz pitted dates (approx. 12 dates)
2 tbsp chia seeds
1 tbsp dark cocoa powder
1 tsp vanilla extract
2 tbsp unsweetened coconut flakes
2 tbsp semisweet chocolate chips
Cinnamon to taste
Salt to taste
Directions
Combine all ingredients (except chocolate chips and coconut) in a food processor or blender and mix to until it forms a paste.
Scoop into a bowl and add chocolate chips/coconut.
Mix and form into 12 balls with your hands.
Refrigerate and enjoy 😊
** These do have a “wet/sticky” consistency, so you may want to add more oats!
