Peanut Butter and Jelly Energy Bites

Back with another energy bite recipe, because these bad boys have been a staple in my diet this past month! Name a better, more classic combination that peanut butter and jelly. I bet it takes you straight back to childhood, when your mom used to cut the crust off your sandwiches 🙂

These energy bites are a more adult twist on one of the best flavor combos and will power you through those mid-afternoon hunger pangs! They have a higher fat content than my last energy bite recipe and will keep you full for a while. If you somehow missed my Chocolate Banana bites, check them out here!

Peanut Butter and Jelly Energy Bites

Ingredients

1 cup oats

3 oz pitted dates

1 tsp vanilla extract

2 tbsp chia seeds

3/4 cup creamy peanut butter

60 g dried, sweetened strawberries

 

Directions

Combine oats, dates, vanilla, and dried strawberries in a food processor. Blend until mostly mixed.

Pour contents into a bowl and combine with remaining ingredients (peanut butter and chia seeds).

Form into equal size balls and store in refrigerator 🙂

Fat: 7.2g

Carbs: 14.7g

Protein: 4g

 

These are the perfect sweet treat and have kept me full for hours when I am craving something between meals! You could probably substitute any nut butter or dried fruit and make a great twist on the original recipe!

Also, you could probably go with a little less peanut butter, but it’s one of my all-time favorite foods and I couldn’t help myself!
