Chocolate Peanut Butter Cup Energy Balls

Good morning, friends! Welcome to another week of posts and another energy bite recipe. My schedule has been getting busier and busier as our wedding approaches! And I am finding that it’s a lot easier to have “healthy” treats on hand, rather than reaching for candy or ice cream, when the craving for something sweet hits hard!

If anyone reading this has planned a wedding, you know the stress wedding planning can bring. Were you aware that “stressed” is “desserts” spelled backwards? Well now you know… and now I’m sure you want a treat!

Whip up a batch of these energy bites to keep a treat, with very little sugar, on hand in the refrigerator!

Chocolate Peanut Butter Cup Energy Balls


1 cup quick oats

3 oz pitted dates (approximately 12)

2 tbsp chia seeds

¾ cup creamy peanut butter

1 tbsp cocoa powder

1 tsp vanilla

Mini chocolate chips to your preference (I used approx. ¼ cup)

3 tbsp sweetened coconut flakes

Salt and cinnamon to taste


Combine oats, dates, and chia seeds into food processor until mixed.

Pour into bowl and add the following: peanut butter, vanilla, cocoa powder, salt, and cinnamon. Mix well.

Fold in chocolate chips and coconut flakes. (** If you do not like coconut, substitute with agave, honey, etc. This was added to make the bites taste a little sweeter.)

Form into 15 balls with your hands.

Refrigerate in sealed container and enjoy!
